Honey Balsamic Caprese Chicken Bake

Ingredients

  • 1 lb. chicken breast pounded out to 1/2 inch thick
  • 1/4 c. balsamic vinegar
  • 2 Tbsp. olive oil
  • 1 tsp. whole grain mustard
  • 1 tsp. minced garlic
  • 2 tsp. honey
  • 1 1/2 c. cherry tomatoes
  • 8 oz. fresh Mozzarella sliced into 4 pieces
  • Balsamic glaze optional

Instructions

  • Preheat oven to 350°.
  • Add the chicken breasts to a heavy duty resealable bag. Using a rolling pin, pound out the chicken until it is 1/2 inch thick.
  • Add the marinade ingredients to the chicken and seal the bag. Squeeze until the chicken is well coated and marinate in the refrigerator while the oven is preheating or up to 48 hours.
  • Dump the contents of the chicken and marinade into a sprayed 9x13 baking dish. Arrange the chicken so it isn't overlapping.
  • In a medium bowl, drizzle the tomatoes with a little olive oil and sprinkle with a dash of salt. Add the tomatoes to the top of the chicken.
  • Bake at 350° for 15 minutes. Top with slices of fresh Mozzarella. Bake an additional 5-10 minutes, or until the chicken has reached an internal temperature of 165 and the cheese is melted.
  • Serve topped with fresh basil and optional balsamic reduction.
